My husband requested chicken and steak fajitas and I have never made them before but I’m excited about how they came out, on my first try! This is a fun meal to make and eat! It’s for those days when you want a somewhat lazy dinner, that’s not too heavy on your stomach. Two of these delicious fajitas will definitely fill you up!
- Soft flour tortillas
- 2 beef steaks
- 3 chicken breasts (halved, it cooks a little quicker when it’s thinner)
- 4 bell peppers (I like to use a mix of the colors) Sliced
- 1 large onion, sliced
- 3 garlic, minced
- 2 limes, sliced
- 16oz sour cream
- 8 tbsp olive oil
- 2 cups Mexican-blend cheese
- 1/2 stick butter
- 3 tbsp salt
- 3 tbsp cumin
- 3 tbsp red chili powder
- 3 tbsp black pepper
- 3 tbsp garlic powder
- 3 tbsp onion powder
- 3 tsp basil
- 3 tsp oregano
Directions:
- Season your steak with 1 tbsp of each seasoning including 2 tbsp of olive oil and let rest for 30 mins.
- Season your chicken with 1tbsp of each seasoning and 2tbsp of olive oil and let it rest for 30 mins.
- Heat a skillet with 2 tbsp olive oil, 1/2 stick of butter and minced garlic.
- Add your peppers to the skillet and sautée it a little. Season it with 1 tbsp of each seasoning and then add your onions.
- Cook the peppers and onions for about 6-7mins until soft and set aside.
- In a clean skillet, heat up 1 tbsp of olive oil and place one steak at a time. Cook for 5-6 mins on each side. (Cook the steak according to your preference, we like ours medium-well).
- Set the steaks aside so the juices can settle.
- In a clean skillet, heat up 1 tbsp of olive oil and add your chicken breasts. Cook for about 3-4 mins on each side. You want the chicken juicy but not undercooked.
- Heat up your oven to 325.
- Place soft tortillas on a sheet pan and bake for 3-5 mins.
- Thinly slice your steak and chicken and set aside.
- Rub sour cream on each tortilla, place your peppers, then meat, then a dollop of sour cream.
- Now squeeze a lime on top and sprinkle some Mexican-blend cheese.
- Best served when tortilla is nice and warm from the oven. Enjoy!
